La notion de pefsou qui intervient dans le comptage des céréales nécessaires à la fabrication du pain et de la bière est traitée de manière significative dans le corpus mathématique égyptien.
Mais que détermine exactement ce pefsou et pourquoi pouvons-nous le considérer comme un élément de recette du boulanger et du brasseur égyptien ? La réponse se situe dans les papyrus de Rhind et de Moscou.

Abstract (EN)
The notion of pefsou that intervenes in grain counting necessary in bread and beer fabrication is significantly treated in the Egyptian mathematical corpus.
But what this pefsou exactly determines, and why do we consider it as an element in a recipe for the Egyptian baker and brewer? The answer lies in both the Rhind and the Moscow papyrus.
